Here are some subtle techniques the other elements might employ, Halaku. ;D
Earth: Between the iron in a person's blood, the calcium in their bones, not to mention other misc. minerals throughout the body, an Earthbender could do some nifty puppeteering or even the removal of a person's skeleton. *shudders* Bumi showed us that he is able to travel in the ground which would make for some nice stealthwork.
Air: Asphyxiation anyone? Whether it be through the pulling of air out of the lungs, or manipulating the air around the breather so that oxygen is not in sufficient quantities, an Airbender could be frighteningly lethal. In theory an Airbender could also affect the motion of air particles, thus affecting the air's temperature (speed up the particles - heat, slow them down - cold) not to mention the possibility of using air particals to bend/refract light thereby going invisible. We also know that airbenders are able to make themselves move faster, perhaps they could also do the reverse and make their opponents move slower...
Fire: Redirection of the sun's rays onto one person would give them a quick case of sunstroke and if magnified enough could make them to "spontaneously" combust. Energy manipulation (whether it be fire or lightning) could create shields and barriers like something off a sci-fi flick, and yes Iroh said that Lightning could not be controlled but there was a time when the wisdom of our world was that "if man were to fly he would have been given wings" and we of course now know that is not the case. And then there is the most under-utilized aspect of fire, its healing properties. The cauterizing of wounds, the soothing heat of tea and soup, the healing abilities of sunshine, and the fever that helps the body rid off viral infections could all be duplicated/imitated by fire bending.
So what is my favorite? I am partial to fire, mainly due to its potential and the fact that it is so under-utilized. If I were a fire-bender I would definitely work to create radically new techniques as opposed to the standard (and so unoriginal) point, blast, repeat. LOL
