those are correct for most of each type of bending, but other characters do use other fighting styles in their bending, such as The Boulder, who uses moves that are very akin to wrestling. are there any benders who use the ninjitsu martial arts?

Well Snehal, ninjitsu is japanese in descent, so it wouldn't be used in Avatar, which is more centered around chinese martial arts. However, ninjitsu cna be traced back to China, since the art was taken to Japan in the 2nd century.
All of the Avatar styles of martial arts appear in the Mortal Kombat games. In Deception, Baraka has Hun Gar, Shujinko uses Shaolin Fist (or Northern Shaolin, aka Firebending), Kenshi uses Tai Chi and I believe Ashrah uses Ba Gua.

even if most of the martial arts are chinese, Avatar is influenced by all corners of Asia, and other areas of the world too. they could potentially have various benders using any RL fighting styles, or the creators could invent some of their own. in the end the writers and choreographers make it so.

Most styles are chinese, but some are different so everyone isn't repping the same moves. Yes the boulder was wrestling to fit his scene. That episode reminded me of a wrestling match, Also did ne 1 notice the earthbender in the intro looks alot like Zhao

air uses pa kua (ba gua). Just wanted to correct your spelling.
ba gua zhang, or eight trigrams palm, is an internal style Chinese martial art that incorporates the elements of Yin/Yang, 5 phases, and I-Jing in the fighting principles. No two ba gua zhang stylists are the same, as one's body type may be better suited to the heavy fighting principles of the art, or perhaps the quick and light principles. (Ang uses the light principles: Yin, snake and dragon postures/palms, and emptiness in his footwork).
Ba gua is famous for its circular foot work patterns and the martial artist's ability to fight against multiple opponents!

OK, well then, what does fire bending use? I've been wondering, and I want to know. Also, water bending is mostly for defence, right? Because I read that somewhere and I wanted to know....

To describe it simply:
Airbenders evade the attack.
Waterbenders redirect the attack.
Earthbenders intercept the attack.
Firebenders preempt the attack.
Airbenders are completely defensive, they even say that there are NO fatal attacks in the style, while Firebenders are completely offensive.
Waterbenders redirect the attack, more basically they counter it, and Earthbenders simply block the attacks thrown at them.
So even more basic:
Air - Dodge
Water - Counter
Earth - Block
Fire - Attack
Also, Toph uses Southern Praying Mantis Kung Fu.
