how come firebenders can shoot fire from their fingers, but water benders can shoot water from their fingers?

That's a good question. I think the reason for that is that with firebending, the fire comes from within you; if you were to have an excess amount of water, though, you'd wind up dead. If you were to release the water from within you, you'd wind up dead too. In my opinion, firebending is not just bending the element, but harnessing the "fire within" so to speak.

Does anyone else have any ideas about this?

Firebenders seem able to dictate temperature. Perhaps they're igniting the air and using it as the medium for which their fire travels, which could well explain Aang's ability to seemingly redirected fire blasts.

A lot of people don't realize that firebending isn't simply shooting fire magically. You have to actually perform martial arts strikes. The punches are what make the attacks explosive, for example. It's not like they're magicians, they're just martial artists who utilize fire to extend their reach so to speak.

Then again, one could say firebenders DESERVE to 'conjure' fire rather than simply can. I mean, Earthbenders and Waterbenders can't really conjure their elements, and the airbenders don't need to for obvious reasons. If people could simply bend their respective elements, and were limited only to this, then firebenders would not have concurred ANY of the Earth Kingdom: They're not be able to fight on the front, only with their machinery which from the looks of things is made and operate through firebending. There's not a lot of natural incidents involving the presense of fire, whereas we STAND on Earth and water is not only common, but can be carried around with you like in Katara's skein.

So, it could simply be that they 'conjure' fire because if they couldn't, they'd suck too much for the storyline to flow.

I just started thinking about Firebenders carrying torchs around with them like a crazy mob as there source of fire.

Fire is a chemical reaction called combustion. If you think about it, Oxygen is already in the air as is nitrogen and sources of hydrogen. All the firebender really needs to do is start the reaction with some trigger heat and boom, fire.
